From the Ground Up: National Nutrition Month Serves Up Healthy Eats

graphicMarch is National Nutrition Month, and Strong Memorial Hospital’s Cornell Dietetic Interns are celebrating by whipping up new healthy features and free samples in the House of Six Nations cafeteria. This year’s theme, From the Ground Up, encourages you to get to know how your food journeys from the ground to your plate.

Throughout the month, faculty and staff will have the chance to not only nosh on nutritious new dishes, but will learn to make more informed food choices both by better understanding the source and choosing more nutrient-rich selections from all five food groups.

Tantalizing fare abounds! See the line-up below:

  • Thursday, March 11, showcases recipes from The American Institute for Cancer Research's New American Plate cookbook, including Chickpea Chili and Apricot Cookie Bars;
  • Tuesday, March 16, serves up Vegetable Lasagna Noodles;
  • Wednesday, March 17, features Sweet Potato Shepherd's Pie;
  • On Tuesday, March 23, dietetic interns present “Mixing up your Greens” at the salad bar;
  • Potato Skins with Avocado Cream Sauce arrive on Wednesday, March 24;
  • Cheesy Mushroom and Asparagus Strata wrap up the festivities on Thursday, March 25.
